Raw Vegan Lemon Squares

Okay, so i’m not vegan and I know that word can be a little daunting. Plus, I doubt many think of raw vegan desserts as being delicious. But trust me, they can be amazing (when made right!). I’ve done some experimenting in my kitchen and come up with these deliciously fresh & zingy lemon squares that are definitely made right. These sort of recipes can be tricky, and I used to think I would never be able to create them. Now, with a lot of trial and error I think I have finally mastered this raw dessert, and I’m so excited to experiment with new flavours now that I’ve perfected the basics! Of course, I want to help out anyone who reads my blog so that we can all enjoy delicious raw desserts, so.. here’s my recipe! (Prior word of warning: these are MESSY!)

Ingredients

— for the base:

◊ 1/2 cup cashew nuts (soak for at least 3 hours as they will blend easier)

◊ 1/2 cup of soft pitted dates

◊ 1/2 cup dessicated coconut

◊ pinch of salt

◊ 1/4 cup coconut chips

◊ 2 tbspn fresh lemon juice

— For Icing

◊ 1/2 cup ground almonds

◊ 1 tbspn melted coconut oil

◊ 2 tbspn maple syrup (or agave syrup)

◊ zest of one lemon

◊ drop of vanilla essence

◊ 2 tbspn fresh lemon juice

◊ frozen raspberries

Method

◊ Line a baking tin with non-stick paper.

◊ Pour all of the base ingredients into a blender and blitz until it is all broken down into a wet sand-like consistency (feel free to add more lemon juice to reach desired consistency).

◊ Pour this mix into your baking tin and flatten it out to about 1.5 cm thick.

◊ Leave in the freezer while you make the topping.

◊ For the topping, simply mix all of the ingredients together until you get a runny icing consistency that will spread nicely over the base. (feel free to customise the ingredients as desired).

◊ Pour the icing over the base and sprinkle with frozen raspberry. Leave to set in the freezer for at least an hour.

The icing remains smooth and creamy to taste, and the frozen raspberry compliments the tartness of the lemon. This is a wonderful dessert or snack, perfect served straight from the freezer!
