It’s taken me some time to figure out the perfect protein pancake recipe. There always seems to be inconsistencies and added hurdles when adding protein to a pancake mix and although it’s been a long path to get here, I have fiinally come up with the most delicious protein pancakes i’ve ever tried. Of course you don’t have to add protein if that’s not your thing, simply substitute the protein powder for extra flour.
(makes 8 medium pancakes)
◊ 150g self-raising flour
◊ 200g wholemeal flour
◊ 1 tspn baking powder
◊ 1 scoop vanilla protein (I use a vegan blend by tropeaka)
◊ 1 drop vanilla essence
◊ 200ml+ almond milk (I like my mixture quite thick but feel free to customise)
◊ 1 tbspn coconut sugar
◊ 1 large egg
◊ Optional: fresh blueberries, macadamia nuts (seriously recommended!)
◊ Simply add all ingredients into a bowl (except the blue berries and macadamia nuts if using) and whisk together to incorporate some air into the mixture, and until no lumps remain. Leave to stand for 5-10 minutes.
◊ Heat a large pan on the hob at low-medium heat and melt a little coconut oil or oil of your choice.
◊ When the oil is hot enough, spoon the mixture onto the pan (I usually fit two at a time) and sprinkle the blueberries and nuts on top, then cover with a little more mixture.
◊ When the pancakes visibly seem dryer around the edges and little air holes begin to form on the surface (around 3-4 minutes) then they are ready to flip (cook for a further 2-3 mins).
◊ Stack them high and enjoy!
I have chosen to top mine with fresh strawberries and my homemade cleantella which you can find the recipe for here! However, they are just as delicious drowned in maple syrup and accompanied by some crispy bacon!
